Gaia theory requires an understanding that each organism on the earth is part of the whole. Whew!
So, when Patrick Mangold-White and Jon Edwards wanted to put together a new restaurant, they wanted to be sure that they would respect the earth and provide a great dining experience.
And, they have by adding a little more of the eclectic to Old South Pearl Street. From the moment you walk into this charming Victorian home, the aromas entice you. Patrick and Jon have created a venue that offers organic and local produce, fresh juices, the BEST iced tea in the world!, delicate crepes, sandwiches, salads and soups. Currently, the bistro is open for breakfast and lunch but plans include a liquor license and a dinner menu. Back yard green-houses operate throughout the summer and ensure that all produce, herbs and spices are organically and very locally grown. Be sure to start your morning with the egg, spinach, tomato, and wild mushroom scramble served with a side of natural raised bacon. Or, try the cured salmon (they make their own gravlox on site) served with scallion cream cheese, tomatoes, and capers served on brioche. Espresso coffees are available as is coffee via a French press. Blueberry muffins are a must as is a taste of a sticky bun (also available to go). The crepes are the story at Gaia. You can make up your own or trust the menu. And, it's a good menu to trust! Lunch can offer you some traditional sandwiches but be sure to savor the baked brie and tomato with basil pesto on brioche or the peppered lamb loin salad with goat cheese, toasted pine nuts and figs, dressed with a Kalamata olive vin. Breads are home made, crusty, healthy, and fabulous. And, once again, the crepes are the headliners here. Try the pancetta, rotisserie chicken, Fourme d'Ambert blue cheese and kalamata olives crepe. Do NOT miss the iced tea which is sun brewed from a house recipe of three teas. This is really, truly the BEST iced tea in the world! A word about the art: a kinetic sculpture by renowned Denver artist Bob Mangold welcomes guests. Lighting fixtures and a rather unique bathroom sink were fashioned by Mangold-White's brother. This delightful and busy restaurant will have you happy to just be where you are! Dining on wonderfully prepared food in an incredibly charming space.
